Non-Destructive Authentication of Cooking Oil Using Portable Laser Speckle Imaging with Linear Discriminant Analysis

Abstract

Authentication of cooking oil is an important issue because the practice of adulteration by mixing low-quality oil can reduce nutritional value and pose health risks. This research proposes a non-destructive method for authenticating cooking oil using a portable Laser Speckle Imaging (LSI) system with Linear Discriminant Analysis (LDA). The system is designed using a 650 nm diode laser, a CMOS camera, and a Raspberry Pi as the main processor for real-time data acquisition and processing. The samples consist of branded packaged oil, bulk oil, and adulterated oil. Optical parameters, including speckle contrast, intensity, and standard deviation, were extracted using MATLAB and classified using LDA. The resulting image parameters showed that Linear Discriminant Analysis was able to separate the three types of oil with clear margins, where the LDA graph showed that packaged oil had a high positive LD1 value, bulk oil was around zero, while blended oil had a negative value. The correlation between the speckle contrast of LSI and the results of FTIR strengthens the reliability of the system, where packaged oil shows high transmittance with stable contrast, bulk oil has medium transmittance with moderate contrast, while blended oil exhibits high absorbance with low contrast. This research proves that integrating LSI with LDA and FTIR is effective as a non-destructive, fast, portable, and practical method for authenticating cooking oil, making it suitable for food quality monitoring and fraud detection.
